What is Japanese BBQ?

Japanese BBQ, also called “yakiniku”, is the Japanese take on Korean BBQ which simply means grilling pre-marinated thinly-sliced premium cuts of protein on a gas or charcoal grill.  The Japanese then placed their own spin on the concept and added soy and gochujang based dipping sauces making the final dish completely unique.  This hybrid technique became widespread in Japan after WWII and ventilated grills finally came about in the 1980’s making dining experiences more comfortable.  Restaurants featuring this type of cooking have only recently surfaced in the United States in larger metropolitan cities with the closest being in Chicago, IL. 

KOEN’s Visionary – Brian Choi

Brian attended business and culinary school in the United States and Korea.  To this day, he continues to travel all over the world relentlessly searching for inspiring new trends and culinary ideas to implement in his restaurants.  He got his first official apron dirty helping his family run Shogun Japanese Restaurant, a local Lincoln tradition.  Brian then purchased Kinja on 70th and Pioneers in 2010 and continues to successfully serve Lincolnites as the #1 Go-To destination to satisfy sushi cravings.  While he enjoys owning and operating Kinja, Brian found that he seriously missed eating Japanese BBQ and wanted to introduce the long-honored grilling tradition to the Midwest.  Creating a sense of community and a comfortable family atmosphere is his secret ingredient, as his fondest memories growing up centered around sharing food with his family and friends.   And so, after several years of planning (and a few kitchen taste tests later) KOEN was born! This very first Japanese BBQ and Sushi Restaurant established in Lincoln, NE promises to create unforgettable memories that will quickly become one of Lincoln’s premiere dining experiences.
